Stuffed Summer Squash Boats

This week in Healthy Cooking Class we made stuffed squash boats with our fresh summer squash! We used lean ground beef and light sour cream to keep this delicious recipe low-fat and nutritious. 

 

 

 


Ingredients

  • 3 Large Summer Squash - We used yellow squash and zucchini!
  • 1/2 Large White Onion (chopped)
  • 4oz Shiitake Mushrooms (chopped)
  • 4 Cloves Garlic (minced)
  • 1lb Ground Beef
  • 3/4 Tsp Sea Salt (plus additional)
  • 1/2 Tsp Black Pepper
  • 2 Tbsp Sour Cream
  • 3/4 Cup Swiss Cheese

Instructions

1. Preheat oven to 400 degrees F. Line a baking sheet with foil or parchment paper.

2. Slice the squash down the long side. Use a scoop or spoon to partially hollow out the seedy center of each squash half.

3. Arrange squash on the lined baking sheet, cut side up. Sprinkle lightly with sea salt. Bake 15-20 minutes, until almost fully softened.

4. Meanwhile, heat olive oil in a skillet over medium heat. Add onions and saute about 7-10 minutes, stirring occasionally, until translucent and slightly browned. Add Shiitake mushrooms and garlic. Saute 5-7 minutes, stirring occasionally until the mushrooms are slightly brown and smaller.

5. Turn up the heat to medium high. Add the ground beef to skillet. Season with sea salt and black pepper. Saute 7-8 minutes, breaking up the pieces, until beef is browned and onions are caramelized.

6. Remove from heat. Stir in sour cream and half of the shredded Swiss cheese. Spoon the filling into the squash halves.

7. Bake for 10 minutes, until squash is cooked through and filling is bubbly.

8. Turn the oven to broil. Sprinkle the remaining cheese evenly on top of the squash boats. Broil 3 minutes until the cheese is melted and browned.
