Egg White Breakfast Casserole
Ingredients
- Cooking Spray
- 32oz Egg whites
- 1/3 cup nonfat plain greek yogurt
- Salt and Pepper to taste
- 8oz fresh mushrooms
- 1 small onion, chopped
- 2 1/2 cups cooked turkey sausage crumbles
- 1 plum tomato, chopped
- 2 cups shredded cheddar cheese
Instructions
- Preheat the oven to 350 degrees. Spray a casserole dish with nonstick cooking spray.
- In a medium bowl, whisk egg whites, yogurt, salt and pepper together. Pour into the casserole dish.
- Bake about 10 minutes, until casserole starts to set.
- Meanwhile, saute mushrooms and onion in a pan until softened, 5-10 minutes.
- Spread mushroom mixture, sausage crumbles, and tomato over the egg layer. Cover with cheddar cheese.
- Continue baking 10-15 minutes, until eggs are set and cheese is melted.
