Egg White Breakfast Casserole

Ingredients

  • Cooking Spray
  • 32oz Egg whites
  • 1/3 cup nonfat plain greek yogurt
  • Salt and Pepper to taste
  • 8oz fresh mushrooms
  • 1 small onion, chopped
  • 2 1/2 cups cooked turkey sausage crumbles
  • 1 plum tomato, chopped
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat the oven to 350 degrees. Spray a casserole dish with nonstick cooking spray.
  2. In a medium bowl, whisk egg whites, yogurt, salt and pepper together. Pour into the casserole dish.
  3. Bake about 10 minutes, until casserole starts to set.
  4. Meanwhile, saute mushrooms and onion in a pan until softened, 5-10 minutes.
  5. Spread mushroom mixture, sausage crumbles, and tomato over the egg layer. Cover with cheddar cheese.
  6. Continue baking 10-15 minutes, until eggs are set and cheese is melted.
